The Wine List has been radically updated and improved recently with the intention of making it the best in Scotland. Daniel McDermott has taken over the role of managing the wine cellar and is dealing with a number of new suppliers such as Les Caves de Pyrène, Friarwood, Liberty Wines & Whirly Wines, as well as some old favourites including Raeburn Fine Wines, Cheviot Wine and Corney and Barrow. The Three Chimneys has always held a passion for smaller, lesser-known, but formidable producers, making wine in all of the World’s best regions.
The new Wine List is eclectic and makes great reading for the enthusiast. It has been selected to provide a comprehensive choice of wines to match the food served at The Three Chimneys. Many wines are available by the glass, ideal with the spectacular Seven Courses of Skye Tasting Menu.
Daniel has acquired an excellent knowledge of the new Wine List and will be very pleased to assist customers with their choices. Both he and Jeanette and other senior members of the front-of-house team enjoy this aspect of their work as much as any other. They have accumulated excellent professional knowledge and are intent upon expanding this with the assistance of further training from the Wine and Spirit Education Trust.
The Drinks List offers a comprehensive selection of beers, wines and spirits for our house guests and restaurant customers to enjoy before and after Dinner in the evening. A full lounge service of these plus soft drinks and hot and cold beverages, is provided in The House Over-By each night. There is a good choice of blended whisky and around 30 single malts of varying maturity and strength, including the island’s own - Talisker - the golden spirit of Skye. Cocktails are another house speciality enjoyed by many!
