Happy Easter to All of our Guests - Our 33rd Season Gets Underway!
While the days remained a little quieter, we devoted time to developing new dishes for the Menus, updating our Wine List and training Team Three Chimneys; committed to ensuring that the service provided for our guests exceeds all expectations. Some overnight guests took advantage of the shorter winter days, to participate in customised, Afternoon Wine Tastings and a special Whisky Tasting for one particular party was a great success. However, improving the Front-of-House Team's Wine and Beverage skills, is also important for their career development. Petri is now qualified to tutor for the Wine and Spirit Education Trust and a number of Team Three Chimneys participated in this training in-house, successfully culminating in the official examination and qualifications for WSET Level 2. Both Charlotte and Petri have been active in providing wine training and tasting for both the Front-of-House and the Kitchen Brigades. Chef Scott also believes it is essential for his Chefs to understand more about the importance of good taste and why some wines match well with certain dishes - or not, as the case may be!
The Front-of-House Team also participated in Whisky Training with some notable Distillers coming to the Restaurant to offer tasting and tuition. Skye is witnessing a dramatic rise in the Scottish drinks sector with successful, artisan brewing operations, craft gin distilling and two brand new whisky distilleries at Toravaig in Sleat, south Skye and on the neighbouring Isle of Raasay, accessible by ferry from Sconser.
On a recent day out to the new Raasay Distillery, the Team sampled a special "While We Wait" bottling which will tempt every visitor into looking forward to the "real thing" maturing for the marketplace, in a few years’ time. These new distilleries, together with Skye's world-renowned Talisker distillery, form part of a private, day-long tour that visitors can arrange.
